Coconut bacon bliss

Crispy coconut flavoured to imitate bacon but totally vegan!

Since giving up meat and moving on to far more creative meals, I have discovered liquid smoke.. Basically it is the liquid collected when wood is smoked- no meat is involved and it has changed how a lot of veggies in my house are now cooked!
One example is the coconut bacon that I make.. I use coconut flakes, from Gorimas- it is the most affordable option and a marinade of :
- olive oil/ coconut oil - about 3 tablespoons
- paprika- 1 teaspoon
- 3 or 4 black peppercorns
- a tablespoon of honey
- 3 tablespoons of tamari
mix it up and have a taste- like a little taste... you may need more honey or tamari to your taste buds
pour the coconut flakes into a dish and then the marinade over .. mix around until it is all mixed up
stick in the oven at 120 C degrees for like 5 min and then turn down to 100 C degrees for 5 min more- keep an eye on it. it can burn quickly!
switch off the heat and leave in the oven with the door open... after wards, let it cool and then seriously enjoy the yummiest, healthiest bacon alternative!
