So I recently tried the plant based range from Woolworths and was excited to give the mince a go. It was a decent portion for a good price ( R39.99 for 180g) . I had ben craving a good pasta dish and spaghetti is always a winner for me. I sauteed the mince , from frozen, in some coconut oil until it got a shade darker and then removed from the pan. In the same pan I fried up onions, garlic flakes, chilli flakes and roma tomatoes ( rough chop). Once this was cooking I boiled the pasta- 2 portions. Once the sauce was starting to thicken up I seasoned with salt and pepper and then added the mince to the mixture. Pasta was added in after with some of the cooking water and toss to combine it all together. This was a great hearty dish for us on a cool evening. The mince kept its shape and flavour, and the chilli flakes add a nice kick of flavour. A great addition to the freezer and a quick 30 min meal to whip up. I would add some parsley next time and perhaps try it with fresh chilli to see the difference :)
