Cheesy potato bake

I really do love potatoes :) They are versatile and truly special root encounters of a carb kind. I most enjoy how they are transformed under various circumstances. This past week i worked on a casserole style potato dish including lots of herbs, butter and cheese... not a bad combination!
I first boiled my potatoes until they were just about tender to the fork. Then I cut them in half and left them to cool . I cut oregano, basil, sage , spinach and spring onion and used my matzaluna to chop them up fine . I popped them into the casserole dish with some butter and coconut oil to fry up for a bit while I grated some cheese.
After the herbs were softened but not brown , I added the potatoes, cut side down into the herbs and baked for about 20 min until the potatoes were soft and ready to break apart. Then I added the cheese and let it bake further for 10 min.

The result was fluffy herby potatoes with a top layer of gooey cheddar cheese . This proved to be a main meal for me as it was filling and so great for lunch the next day!
