Laziest vegan mac and cheese

So I always read mac and cheese recipes that had no dairy and was like,, ugh I dont have time to make cashew nut sauce!! also damn cashews are expensive! And they take forever.. This was 30 min max
So I improvised.. I got coconut milk and rice flour from Gorimas ( thanks!) and nature and moi grated cheese from Checkers ( also thanks). I have nutritional yeast - aka nooch- at home- it truly is a great product and I recommend it to anyone who likes flavour in their food.
SO the sauce... i added some olive oil to a pan- let it get warm and added the rice flour to make my roux.. this was all on instinct btw. Just winging it .

Once it started cooking, I added the can of coconut milk and let it start cooking, and it started thickening up! I was so excited :) I added paprika and the nooch and stirred until it was a thick and creamy alfredo looking pot of love! salt and pepper to your own taste. The nooch adds a Parmesan taste to it and that ain't bad.

The the sauce was mixed with my cooked paste - and I sprinkled the sheese over it and ta-da 15 min later after a quick bake in the oven at 180 - it was all kinds of baked pasta goodness!! I am seriously so happy about this recipe . I hope it helps you have a karma free pasta dinner !
