Not so meaty meatbballs

I really enjoy eating lentil, but only in so many ways can you indulge in lentils. i boil us a bag , divide into portions and freeze- quick day defrost and I can cook them at night.


I had heard of lentil meatballs but never attempted before... So i tried- pulsed the lentils - about 200g with cashew nuts, thyme- and fried onions with garlic- added panko breadcrumbs at the end - about 150g- to make this grey brown mixture that tasted great!


I rolled them up using slightly wet hands and put into a hot casserole dish with some coconut oil already melted in. They baked for about 20 min- switching heat elements between top and bottom. They held their shape- mostly.... But I served them with quinoa- which I tried to make in the microwave and it worked!! Simply added to boiled water- stuck into microwave in a casserole and let it boil up for about 8 min and then covered. I had added a stock cube as well. It still was a little bland for me.


I served the lentil balls with a simple passata and olive oil sauce. Truly enjoyed this. I had some mixture leftover which I will make into patties for some burgers next week:)
