Soya Prawns- Meat Free Chutney

I adore when a good veg curry is made well. Unfortunately it is not the easiest to find and sometimes you have to do it yourself to get the curry that you want!

I use the Fry's battered prawns- which I bake in the oven in some coconut oil until they are crispy. It takes about 15 min on 180 approx if they are being cooked from frozen.

For the chutney I chop up a quarter of an onion, 2 chillies and about 4 jam tomatoes ( important for the chutney!)

I fry the onions and chillies until they are half way cooked and then add the masala ( my gran's recipes or else a masala mix from Gorimas) and fry for about a minute- Do not let it burn!

Then add the chopped tomotoes- skins and all- and then it is a waiting game to cook out. Salt the tomatoes and smush them into the masala. You can add some water here- about half a cup or so. Then let it cook. Stir often and you want to see the water coming out of the tomatoes and cooking into a nice chutney. It will look watery ! Do not stress. Once the water has increased and the tomatoes are cooked ( about 15 minutes on med/high), you can leave the lid off and let the water evaporate. The chutney will change consistency and at this stage you can add curry leaves. Then you can add the soya prawns , stir them in and leave it cook for about 5 min. Before serving add some chopped dhania ( coriander). Serve with roti/ naan bread/ rice as you like :)
